Glutathione is a tripeptide compound found in all living cells and is a combination of glutamic acid, cystine and glycine. Glutathione is an important intermediate substance in biological metabolism, mainly in defense of DNA damage, especially in wheat germ and yeast. Glutathione has two forms, reduced and oxidized, and the oxidized form is the link of its reduced disulfide bond. Glutathione can be produced by fermentation of yeast such as Saccharomyces cerevisiae.

The sulfhydryl group (-SH) of glutathione can be oxidized into -S-S- bond, thereby generating cross-linked disulfide bonds in protein molecules. The reversibility of sulfhydryl bond oxidation and reduction has a significant impact on the activities of many enzymes in organisms, especially some enzymes related to protein transformation. Among the two configurations, the reduced form has a greater effect. The reduced form of glutathione can reduce the -S-S- bond in the biological enzyme to -SH group, thereby restoring or improving their activity.

Glutathione has broad-spectrum antioxidant capacity and can be used in anti-aging skin care products; it has the effect of whitening the skin, can inhibit skin browning, and can effectively condition the skin and moisturizing; the sulfhydryl group of glutathione is closely related to hair The cysteine sulfhydryl group in it can form a cross-linking bond, and it is often used together with cationic polymers such as JR400 in hair perm, and the damage to the hair tissue is less.
